Amazing Pumpkin Cookies with White Chocolate Drizzle

Soft and chewy pumpkin cookies made with brown sugar, pumpkin spice, and drained pumpkin puree, then finished with a sweet white chocolate drizzle.

Ingredients
  

  • Cookie Dough:
  • 1 cup unsalted butter, melted
  • 2 cups all purpose flour
  • 2 egg yolks, room temperature
  • 1/2 cup dark brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1/2 cup pumpkin puree, drained
  • 1 tsp pumpin spice
  • t tsp baking soda
  • White Chocolate Drizzle
  • 1 cup cup white chocolate, melted

Equipment

  • Large or Medium mixing bowl
  • Hand mixer or stand mixer
  • Measuring cups and spoons
  • Whisk or Rubber spatula
  • Cookie scoop
  • Baking sheets
  • Parchment Paper
  • Cheesecloth or paper towels
  • Wire cooling rack
  • Microwave-safe bowl for melting chocolate

Method
 

  1. Place the pumpkin puree in cheesecloth or several layers of paper towel. Gently drain or press out excess moisture. Set aside.
  2. In a large mixing bowl, cream together the softened butter, dark brown sugar, and granulated sugar until smooth and creamy.
  3. Add the egg yolks and vanilla extract. Mix until fully incorporated.
  4. Add the drained pumpkin puree and mix until combined.
  5. In a separate bowl, whisk together the all-purpose flour, salt, pumpkin spice, and baking soda.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  7. Cover the dough and refrigerate for about 30 minutes, or until firm enough to scoop easily.
  8. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  9. Scoop the chilled dough onto the prepared baking sheets, leaving space between each cookie.
  10. Bake for 10–15 minutes, or until the edges are set and the centers still appear slightly soft.
  11. Allow the cookies to cool on the baking sheet for several minutes before transferring them to a wire rack.
  12. Once completely cooled, drizzle the melted white chocolate over the cookies.
  13. Allow the white chocolate to set before serving.

Notes

  • Drain the pumpkin puree before adding it to the dough to remove excess moisture.
  • The amount of moisture in canned pumpkin can vary, so draining helps create a more consistent cookie texture.
  • Do not overbake. The centers should still look slightly soft when the cookies come out of the oven.
  • Allow cookies to cool completely before adding the white chocolate drizzle.
  • If the white chocolate becomes too thick for drizzling, gently warm it until it reaches a smooth consistency.
