Ingredients
  

  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup vegetable oil
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3-4 very ripe bananas, mashed
  • 1 cup semi-sweet chocolate chips (optional)

Method
 

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper or lightly grease it.
  2. Mix Dry Ingredients:
    In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until combined. Set aside.
  3. Combine Wet Ingredients:
    In a large mixing bowl, add the vegetable oil, melted butter, granulated sugar, and brown sugar. Mix until smooth and well incorporated.
  4. Add Eggs and Vanilla:
    Beat in the eggs one at a time, then add vanilla extract and mix until combined.
  5. Incorporate Dry Ingredients:
    Gently fold in half of the dry mixture, then add the sour cream. Stir until combined. Add the remaining dry mixture and mix until the batter is smooth.
  6. Add Bananas (and Chocolate Chips):
    Fold in the mashed bananas and chocolate chips until evenly distributed. Avoid overmixing.
  7. Bake the Bread:
    Pour the batter into the prepared loaf pan and smooth the top. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve:
    Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
