Blueberry Oatmeal Breakfast Bars

Buttery oatmeal breakfast bars layered with a sweet blueberry and lemon filling and finished with a golden oatmeal crumb topping. A simple homemade treat for breakfast, snacks, or brunch.

Ingredients
  

  • Oatmeal Crust & Topping
  • 1 cup all purpose flour
  • 1 1/2 cup rolled oats
  • 2/3 cup granulated sugar
  • 2/3 cup unsalted butter, melted
  • Blueberry Filling
  • 2 cups 2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 2 tsp cornstarch
  • 1 tbsp lemon juice
  • 2 tsp lemon zest
  • 1/2 tsp vanilla etract

  • 8x8-inch or 9x9-inch baking pan
  • Parchment Paper
  • Large mixing bowlMedium mixing bowl
  • Measuring cups and Measuring spoons
  • Rubber spatula or Mixing Spoon
  • Zester
  • Cutting board
  • Sharp Knife
  • Cooling rack

Method
 

  1. Preheat the oven to 350°F and line a baking pan with parchment paper.
  2. In a large bowl, combine the flour, rolled oats, and granulated sugar.
  3. Add the melted butter and stir until the mixture is evenly moistened.
  4. Set aside approximately 1/3 to 2/3 of the mixture for the crumb topping, depending on how much topping you prefer.
  5. Press the remaining oatmeal mixture evenly into the prepared pan to form the crust.
  6. Bake the crust until lightly set, approximately 8–10 minutes.
  7. While the crust bakes, combine blueberries, sugar, cornstarch, lemon juice, lemon zest, and vanilla in a bowl.
  8. Stir gently until the blueberries are evenly coated.
  9. Remove the crust from the oven and spread the blueberry filling evenly over the top.
  10. Sprinkle the reserved oatmeal mixture over the blueberries.
  11. Bake for approximately 25–30 minutes, or until the topping is lightly golden and the blueberry filling is bubbling.
  12. Remove from the oven and cool completely on a cooling rack.
  13. Once completely cooled, lift the bars from the pan using the parchment paper.
  14. Cut into squares or rectangles and serve.

Notes

  • Fresh or frozen blueberries can be used.
  • Allow the bars to cool completely before cutting so the blueberry filling has time to set.
  • For a more generous crumb topping, reserve closer to 2/3 of the oatmeal mixture.
  • Don't overwork or heavily compress the crust when pressing it into the pan.
  • Frozen blueberries may release additional moisture during baking.
  • The lemon juice and zest help brighten the blueberry flavor and balance the sweetness.
  • Store completely cooled bars in an airtight container in the refrigerator.
