Cozy Pumpkin Coffee Cake with Cinnamon Streusel

A cozy pumpkin coffee cake made with warm pumpkin spice, a cinnamon swirl, and buttery pecan or walnut streusel. Perfect for brunch, weekend baking, or serving with coffee.

Ingredients
  

  • Streusel Topping
  • 1/2 cup light brown sugar, packed
  • 1 cup all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup chopped pecans or walnuts, optional
  • Cinnamon Swirl
  • 4 tbsp light brown sugar
  • 2 tbsp all purpose flour
  • 1 tsp cinnamon
  • Cake Batter
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice
  • 1/2 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/4 cup sour cream
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree

Equipment

  • 9-inch square or similar baking pan
  • Medium/Large mixing bowls
  • Whisk and/or Rubber Spatula
  • Measuring cups and spoons
  • Electric mixer
  • Toothpick or cake teste
  • Wire cooling rack

Method
 

  1. Preheat the oven to 350°F and grease your baking pan.
  2. Make the streusel by combining brown sugar, flour, cinnamon, salt, and chopped nuts.
  3. Add the melted and cooled butter and mix until coarse crumbs form. Set aside.
  4. Prepare the cinnamon swirl by combining brown sugar, flour, and cinnamon in a small bowl.
  5. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  6. In a large bowl, combine brown sugar, granulated sugar, and vegetable oil.
  7. Add sour cream, eggs, vanilla extract, and pumpkin puree. Mix until well combined.
  8. Gradually add the dry ingredients to the wet ingredients and mix just until combined. Do not overmix.
  9. Spread half of the cake batter into the prepared pan.
  10. Sprinkle the cinnamon swirl evenly over the batter.
  11. Add the remaining batter and gently spread it into an even layer.
  12. Sprinkle the streusel topping evenly over the cake.
  13. Bake for approximately 45–55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  14. Allow the cake to cool before slicing and serving.

Notes

  • Make sure the melted butter for the streusel has cooled before mixing it with the dry ingredients.
  • Do not overmix the cake batter once the flour has been added.
  • Plain pumpkin puree works best; do not substitute pumpkin pie filling.
  • Chopped pecans or walnuts are optional in the streusel.
  • Begin checking the cake toward the end of the baking time because ovens and baking pans vary.
  • Allow the cake to cool before slicing for the cleanest pieces.
