Easy Fruity Pebbles Rice Krispies Treats with White Chocolate

These Fruity Pebbles Rice Krispies treats are a colorful twist on the classic cereal bar, made with gooey marshmallows, chopped white chocolate, and a sweet white chocolate coating.

Ingredients
  

  • Cereal Bars
  • 10 oz bag of mini marshmellows (reserve 1/4 cup)
  • 5 cups fruiti pebbles cereal
  • 5 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Chopped white chocolate, for stirring in
  • White Chocolate Coating
  • White chocolate, for dipping

Equipment

  • Large saucepan
  • Wooden spoon or silicone spatula
  • 8x8-inch or 9x9-inch baking pan
  • Parchment Paper
  • Measuring cups and spoons
  • Heatproof bowl for melting chocolate
  • Knife
  • Cutting board
  • Mixing bowl

Method
 

  1. Line an 8x8-inch or 9x9-inch baking pan with parchment paper and lightly grease the parchment.
  2. Reserve a small amount of the mini marshmallows for adding later, if desired.
  3. Melt the butter in a large saucepan over low to medium-low heat.
  4. Add the remaining marshmallows and stir continuously until almost completely melted.
  5. Remove the saucepan from the heat and stir in the vanilla extract and salt.
  6. Add the Fruity Pebbles cereal and gently stir until evenly coated.
  7. Fold in the chopped white chocolate and reserved marshmallows.
  8. Transfer the mixture to the prepared pan and gently press it into an even layer.
  9. Allow the bars to cool completely and set before cutting.
  10. Melt the white chocolate until smooth.
  11. Cut the cereal mixture into squares or rectangles and dip one end into the melted chocolate.
  12. Place the dipped bars on parchment paper and allow the chocolate to set before serving.

Notes

For softer, chewier bars, avoid overheating the marshmallows and do not press the cereal mixture too firmly into the pan. Reserving a few marshmallows and folding in chopped white chocolate gives the bars additional texture. Allow the bars to cool completely before cutting for cleaner slices.
