Frozen Yogurt Granola Cups

These frozen yogurt granola cups are a healthy no-bake snack made with oats, almond butter, creamy yogurt, and fresh berries—perfect for meal prep or a refreshing treat.

Ingredients
  

  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 3-4 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cup vegan vanilla yogurt
  • 3/4 cup berries of choice

Equipment

  • Mixing bowl
  • Spoon or spatula
  • Muffin pan
  • Paper liners
  • Measuring cups and spoons

Method
 

  1. In a bowl, mix oats, cinnamon, almond butter, maple syrup, and vanilla extract.
  2. Stir until a sticky dough forms, adding more almond butter or maple syrup if needed.
  3. Line a muffin pan with paper liners.
  4. Add a spoonful of granola mixture into each cup and press firmly to form a base.
  5. Spoon yogurt evenly into each cup.
  6. Top with berries and any remaining granola.
  7. Freeze for up to 3 hours until set.
  8. Let thaw slightly before serving.

Notes

  • Press the granola base firmly so the cups hold together after freezing.
  • Adjust sweetness by adding more or less maple syrup.
  • Let cups sit at room temperature briefly before eating for best texture.
  • Store in freezer to maintain shape.
  • Use silicone molds for easy removal.
