Ingredients
  

  • 2 cups all purpose flour
  • 1 cup light brown sugar, packed
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp allspice
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1/2 tsp cloves
  • 1/2 tsp nutmeg
  • 1/2 cup vegetable or canola oil
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 15 oz canned pumpkin
  • 1 cup confectioner's sugar
  • 3 tbsp maple syrup
  • 2 tbsp milk

Method
 

  1. Preheat and prepare pan
    Preheat your oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper or lightly grease it.
  2. Combine dry ingredients
    In a medium bowl, whisk together flour, baking soda, allspice, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. Mix wet ingredients
    In a large mixing bowl, whisk together melted butter, oil, brown sugar, and granulated sugar until smooth. Add the eggs one at a time, then mix in the vanilla extract and pumpkin puree until well combined.
  4. Combine wet and dry mixtures
    Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix—the batter should be thick and smooth.
  5. Pour the batter into your prepared loaf pan. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. Prepare the maple glaze
    In a small bowl, whisk together confectioners’ sugar, maple syrup, and milk until smooth. Adjust consistency as needed—add more milk for a thinner glaze or more sugar for a thicker one.
  7. Glaze and serve
    the bread has cooled, drizzle the maple glaze evenly over the top. Slice, serve, and enjoy the taste of fall in every bite!
